This is an English soup that was created in the middle of the 18th century as a cheaper imitation of green turtle soup.
It uses brains, calf's head or a calf's foot to duplicate the texture and taste of the real turtle meat.

The gryphon/griffon/griffin/gryphus/ is a legendary beast with the body, tail, and back legs of a lion; the head and wings of an eagle and an eagle's talons as its front feet.
Because the lion was traditionally the king of the beasts and the eagle the king of birds, the griffin was considered to be a formidable and magnificent creature.
The griffin was also thought of as king of all creatures
